


Healthy waffle recipe plus#
It’s so satisfying thanks to the good carbs, protein, plus the healthy fats from the egg and avocado. This meal would make a great “brinner” (breakfast for dinner) or a fun weekend breakfast/brunch. While that is cooking, you can sauté your kale, fry your egg and slice up a little bit of avocado. You then just pack all of the grated sweet potato in your waffle iron and cook until browned. We’re not going full-on waffle style but making more of a waffle hash brown style, ya feel? It’s actually just grated (uncooked) sweet potato, a whisked egg, and some oil. To make the sweet potato waffle, it’s not technically a normal waffle with all of the ingredients that would be considered SWYPO.

But without going into too much more detail on my Whole30 thoughts (that’s for another time) I feel like this waffle sandwich is alright… Or at least on my Whole30 journey it is alright.

Or am I over-thinking it? (Probably, I am a chronic over-thinker…) Like I explained in my post “Why I am Doing a Whole30”, I have jumped on this journey for a challenge, and mainly to see if eating whole foods with no added sugar (and other junk) can help some inflammation in my system, possibly balance my hormones, help my skin, etc. Basically on Day 4 when I was like “What the heck am I doing? This is ludicrous…” Like homemade Whole30 chicken nuggets for example… Or eating dates with nut butter to get your “fix”– yeah I have definitely done that. I mean I feel like there are some gray areas in that clause, you know? Because to me, it seems as though there are many other dishes/meals that could fall under that category. I am not entirely sure if I am “breaking the rules” with this one while doing the Whole30– also known as SWYPO (sex with your pants on)… hmmm. I was feeling really good about it, until I started thinking that maybe I was committing a Whole30 crime… This waffle breakfast sandwich is just so good. These healthy oat waffles are gluten-free, dairy-free and can easily be made vegan by using a chia egg (mix 1 tbsp chia seeds with 3 tbsp water and leave to set for 10 minutes) instead of a regular egg.Oh man oh MAN you guys. You can make your own by simply blitzing plain oats (use gluten-free is necessary) in a food processor or blender. I use oat flour in so many of my recipes, whether for breakfast (like my Strawberry Choc Chip Pancakes or Porridge), in baking (like in my Vanilla Matcha Cupcakes) or basically any other recipe that calls for flour like in burgers or quiche crusts. It’s also cheap and anyone can get hold of it. It’s actually been referred to as a ‘superfood’ although I don’t agree that any one food is super, but certain foods are definitely much better and more beneficial than others, oats are one of those awesome nourishing foods. I’m talking about a low GI, high fibre option that won’t send your blood sugar soaring only for it to come crashing down again an hour later making you feel sluggish, moody and hungry again! When I say waffles I’m not talking about the ones that you buy ready made at the super market, which are basically made of highly processed, bleached white flour, fat, sugar and other junk. The thing about waffles, and it’s something that you can never get with pancakes, is their crispiness. What’s so special about waffles? I never really saw what all the fuss was about, until now! Since hubby was given a waffle maker for his birthday, I tried it for the first time and fell in love! Pancake weekends are now referred to as waffle weekends! Don’t get me wrong, I will always love my pancakes.
